Sea Bass with Spinach, Pine nut, Feta & Cherry Tomato

Our Great Food bites make a great gluten-free alternative to the traditional breadcrumb topping. Crumbled over sea bass and served with steamed new potatoes, this recipe is a deliciously healthy twist on the staple fish and chips!

8 sea bass fillets or 4 small whole sea bass, gutted, scaled, cleaned and fins removed

4 - 6 Spinach & Pine Nut Bites

60g feta cheese, crumbled

6 - 8 cherry tomatoes, quartered

1 tbsp olive oil

1 tbsp pesto

2 tbsp parsley, roughly chopped

Salt and freshly ground black pepper


Serves: 4 | Prep. time: 10m | Cooking time: 10m | Difficulty: Easy

1. Pat the fillets dry with kitchen towel. If using whole fish, rinse each one under cold running water and dry inside and out with kitchen towel.

2. Preheat your oven to 200°C/fan 180°C/Gas Mark 6 and line a baking sheet with lightly oiled foil.

3. Crumble the Bites into a medium sized bowl and mash into the other stuffing ingredients. If your fillets are large you may need to use 6 Bites. Check for seasoning and adjust if necessary.

4. Lay each fillet on the foil, skin side down and spoon a quarter of the stuffing onto each one. Roast for 8 – 10 minutes until cooked through.

5. If using whole fish, season the inside with salt and pepper and fill the cavity of each one with ¼ of the stuffing, packing it in tightly. Put the fish on a baking sheet, lightly oil the skin and season it before roasting for 20 – 25 minutes, until the fish is cooked through. The flesh will feel firm and be opaque when you scrape back the skin.
